Einstein Bros. Bagels will no longer be on campus

When students begin classes Aug. 22, they may notice something is missing from the previous year on the ground floor of the Guillot University Center.

Instead of renewing the contract for Einstein Bros. Bagels, Associate Vice President of Business and Financial Affairs Cindy Conlon said the administration has decided to deconstruct the previous set-up to create additional open-floor space.

“The university will utilize the extra room for student events in the GUC, and we are hopeful the deconstruction will be finished by the time classes begin,” Conlon said.

Chief Financial Officer Evan Thornton said Chartwells, who is the university’s food vendor, originally planned to move Einstein Bros. Bagels into Collier Library before coming back to the administration with a different idea.

“Right now, the university is moving in the direction to consolidate student resources within the library. During the discussions with Chartwells, we decided keeping something like Einstein Bros. Bagels in the GUC would be cost prohibitive,” said Thornton.

Junior Cara Humphries said she is discouraged Einstein Bros. Bagels has left the GUC, but she trusts the university to make the best decision for students.

“I really liked the location of Einsteins. It was central to all my classes, and the prices were more affordable than Starbucks,” Humphries said. “It was really easy to grab a coffee and bagel on my way to class.”

Thornton said there is potential for a grab-and-go marketplace to be put in the GUC, but that would be at an unknown time in the future and based on student demand.

“For now, the new open-floor space might have charging stations or vending machines,” Thornton said. “In the future, it’s possible there could be a marketplace.”
